memories

Yesterday we were at Souper!Salad!.They only had small pepperoni pizza. I took three of them. Dad said I could take the pepperonis off and he would eat them. I took them of and said "I hope there's no hidden ones" remembering a day at Colina.They only had pepperoni pizza that day for lunch. I took one.Then I took all the pepperonis off. Or so I thought.There were hidden ones.

Condemned . . . Holy Crap!

Apparently my church building has been condemned by the City of Chandler. It looks like we are going to have to get used to church that leads into the boys bedtime and pitch black night. I thought this information was pretty funny. Whose church building gets condemned anyway?

Chocolate Chip Cheesecake Squares

Butter
25 sandwich cookies (I used Candy Cane Joe-Joe's)
16 oz Neufchatel Cheese (by the cream cheese), softened
2 eggs
Semi-sweet mini chocolate chips
1/2 cup sugar
1 tsp vanilla

1. Preheat oven to 350. Butter 9x13 pan.
2. Process cookies and press into 9x13 to form crust.
3. Beat cheese, sugar, eggs, and vanilla. Pour over crust. Sprinkle with chocolate chips.
4. Bake 30 minutes until edges are golden brown and center is set. Cool.

Chocolate Pecan pie

9 inch deep dish pie crust ( I buy frozen)
1/3 cup butter
2 1/2 ounces unsweetened chocolate
4 eggs
2/3 cup white sugar
1/2 tsp salt
1 tsp pure vanilla extract
1 cup corn syrup
2 cups pecan halves

1. Preheat oven to 375. Melt chocolate and butter according to instructions on chocolate package. Cool slightly.
2. Beat eggs, sugar, salt, vanilla, and corn syrup. Slowly incorporate chocolate butter by pouring into beaters while beating egg mixture on high speed. Stir in pecans and pour into pie shell. Put foil or pie ring on crust edge.

Pecan Pie (Less gooey but tasty still the same.)

1 cup brown sugar (I like dark), not firmly packed
1/4 cup white sugar
1/2 cup butter melted
3 eggs
1/2 tsp salt (if pecans are unsalted as they should be)
1TBSP flour (I use whole-wheat)
1 TBSP milk (I will try balsamic vinegar next time)
1 tsp pure vanilla extract
1 1/2 - 2 cups Pecan halves
1 9 inch deep dish pie crust (I buy frozen)

1. Preheat oven to 350.

Thanksgiving desserts

Thanksgiving was nice. My parents and sister Alyssa decided to make a last minute visit to AZ to meet Lucy and so we enjoyed their presence at dinner. Todd, a bit of a foodie, ordered a Turducken off the Internet after much research. Jared and I like Turducken (at least the one Todd bought) which is quite surprising since neither of us like Turkey. The years we have done our own Thanksgiving (which gratefully have been few) we had a Thanksgiving salmon. We also do a Christmas salmon (usually) and sometimes an Easter salmon.

Hey everyone! You will all probably start to notice a pattern. Every three months I am in charge of Sharing Time and when that happens my creativity and desire to write declines. I am busy thinking about Sharing Time.

Maxwell's Antics

How do you parent a child who not only can make you laugh at the drop of a dime, but WHO KNOWS he can make you laugh at the drop of a dime? I'm sure my involuntary approach will backfire someday, but I just laugh.

For the past few weeks, I've taken the boys to the park a few nights a week to practice soccer. Usually we play 'monkey in the middle' or we'll setup two goals with cones and scrimmage against each other. Maxwell is the biggest, natural born clown I've ever met. Sara always asks me how it feels to have a twin just like me, but I think Max is way goofier.
